How to Make Garlic Truffle Mayo from SNL’s Bushwick Skit

I’m sure everyone has seen the hilarious SNL skit about Bushwick’s (pretty much all of north, central and south Brooklyn) gentrification. Remember Martha’s Mayonnaise? Although that establishment was fabricated, there is actually a real place that sells artisanal mayo, which was the location for the skit. It’s called Empire Mayonnaise in Prospect  Heights, Brooklyn. The mayo featured on the skit was garlic truffle mayo. Unfortunately for you mayo lovers, Empire does not sell that flavor, yet! The co-owner, Elizabeth Valleau has plans to make a limited edition garlic truffle mayo.

If you are not in the wonderful borough of Brooklyn, I’ve got you covered. Here is the recipe:

Garlic Truffle Mayo

  • Infuse a light-bodied olive oil with shaved or chopped truffles and minced garlic for about three to five days in the fridge.
  • Then strain and and emulsify your mayo (see below).
  • Valleau also suggests keeping “all the good stuff” from straining the mixture for cooking with, instead of throwing it away.

Ingredients

•1 large egg yolk*

•1 1/2 teaspoons fresh lemon juice

•1 teaspoon white wine vinegar

•1/4 teaspoon Dijon mustard

•1/2 teaspoon salt plus more to taste

•3/4 cup infused canola oil, divided

Preparation

Combine egg yolk, lemon juice, vinegar, mustard, and 1/2 teaspoon salt in medium bowl. Whisk until blended and bright yellow, about 30 seconds.

Using 1/4 teaspoon measure and whisking constantly, add 1/4 cup infused oil to yolk mixture, a few drops at a time, about 4 minutes. Gradually add remaining 1/2 cup oil in very slow thin stream, whisking constantly, until mayonnaise is thick, about 8 minutes (mayonnaise will be lighter in color). Cover and chill. Can be made up to 2 days ahead. Keep chilled.

Variation:

To make aioli, add 1 minced garlic clove to the egg mixture, and substitute extra virgin olive oil for the canola oil.

* Raw egg is not recommended for infants, the elderly, pregnant women, and people with weakened immune systems. To avoid the risk of salmonella infection, you can use pasteurized egg yolk instead.
