This month, Beverly Hills welcomes an unprecedented culinary encounter as N25 Caviar, celebrated for redefining the art of caviar ageing, debuts at The Maybourne Beverly Hills. Beginning September 17, 2025, The Maybourne Bar transforms into the city’s first dedicated caviar bar, marrying the hotel’s iconic elegance with N25’s world-renowned precision and innovation.
At the helm of this limited engagement is Executive Chef Damon Gordon, whose 20 years of expertise in Michelin-starred restaurants and luxury hotels shape a month-long caviar tasting journey designed to surprise and delight Los Angeles’ discerning palates.

A Tasting Menu of Rare Indulgence
The bespoke tasting experience unfolds as a carefully choreographed journey—salty, savory, and finally sweet—where each course highlights the complexity of N25’s aged caviars. Among the highlights:
- Truffled Deviled Egg – elevated with Schrenckii N25 caviar and black truffle essence.
- Compressed Watermelon – accented with vodka, powdered lime, and Hybrid N25 caviar.
- N25 Caviar Burger – a decadent combination of salmon, horseradish, and apple remoulade.
- Vanilla Ice Cream with Sea Salt, Olive Oil & N25 Caviar – a playful finale of sweet meets briny indulgence.
The experience extends to a refined à la carte oyster menu, where Eastern and Pacific oysters appear in exquisite variations such as “En Gelée” with sake and green apple and a sophisticated “Rockefeller” with confit fennel, creamed spinach, and aged parmesan.
While the tasting menu is exclusive to this collaboration, select dishes will become permanent fixtures at The Maybourne Bar, ensuring the experience lingers well beyond September.

The collaboration begins with a private launch on September 17, where guests will be the first to savor the full tasting menu amidst the glamour of The Maybourne Bar.
- Caviar Masterclass – On Thursday, September 18, Hermes Gehnen hosts an intimate, seven-guest workshop exploring N25’s ageing process, complemented by Chef Damon’s caviar snacks and a curated flight of Billecart-Salmon Champagne ($175 per person).
- Caviar & Champagne Dinner – On Friday, September 19, The Maybourne’s Chef’s Table will host a seven-course gastronomic experience paired with caviar and Champagne ($350 per person).
A Legacy Beyond September
Even after the collaboration’s finale, The Maybourne Beverly Hills will continue its caviar legacy with a custom-designed N25 caviar cart and caviar butler service available for weddings, private gatherings, and other celebratory occasions.
